Region: Thracian Valley, Southern Bulgaria, Protected Geographical Indication. The grapes come from Katarzyna Estate's own vineyards at the hilly border zone terrains between Bulgaria and Greece (the No Man's Land) in the outskirts of the east slopes of Rhodope mountain with average altitude of 187-210 m. Only few miles away from the most famous Thracian Tomb Mezzek (4th century BC), Katarzyna Estate wines benefit from he unique micro climate, most diverse soils, exciting scenery and meticulous varietal selection, which together with the inspired and dedicated work of the winemakers give birth to White Soil varietals, the hallmark wines of the whole region.
Tasting notes:
Soft, gentle color of salmon. Aroma of forest fruits, vanilla and flowery notes, with slight citrus on the background. Caressing the palate with pleasant fruity character and fresh and long-lasting finish.
VINIFICATION
Before processing the grapes it is cooled in a freezing chamber for about 20h at a temperature 10-12 ̊С. The grapes are then sorted, destemmed and crushed. The crushed grapes macerate for few hours and then are drained and pressed. It's followed by clarification of the juice and alcoholic fermentation at 15-19 ̊С.
VINTAGE 2021
The harvest 2021 is characterized by the fact that during the vegetative season the temperatures were slightly lower than usual for the region. There were also short but frequent rains in May and June. These two factors increased the attention to protect the health of the vines and thanks to our qualified and experienced team, they have remained in optimal condition. Due to the cool spring, the grape harvest was about 1 week late and started on August 20. During the harvest there was no rain, the temperatures were high, as usual in the area. All this led to the maximum maturity of our different grape varieties and the production of concentrated, soft and balanced wines, as is the nature of the winery. The 2021 harvest can be summarized as a great harvest for Katarzyna Estate.
